Origin Story
Every coffee we release under Ember & Acre begins with a place, not a profile. This lot from Rwanda’s western highlands arrived to us with remarkable structure: white florals in the aroma, citrus peel through the cup, and a honeyed finish that lingered long after the last sip. Rather than push it darker for weight, we chose restraint—preserving the landscape inside the bean.
At just over 1,900 meters, cherries ripen more slowly, concentrating sweetness while preserving a vivid acidity. That extra time on the branch is what gives this cup its layered citrus and delicate black tea character—brightness without sharpness, elegance without fragility.
The cherries are floated, hand-sorted, pulped the same day they are picked, then fermented in clean water channels before a patient drying phase on raised beds. The result is precision: stone fruit sweetness, a polished mouthfeel, and a cup that tastes transparent rather than manipulated.
We buy this coffee through a long-term partnership with Abakundakawa Cooperative, returning each season for calibration, feedback, and lot selection. Our commitment is not only to exceptional flavor but to consistency of purchase, transparent premiums, and a relationship in which quality is rewarded year after year.
We approach roasting as editing, not authorship. For this lot, development is intentionally light-handed: enough energy to reveal apricot, bergamot, and raw sugar depth, but never so much that the origin disappears beneath roast. It is designed for filter first, though espresso rewards the patient barista with jasmine aromatics and a candied citrus finish.
